In a large sauté pan over medium heat, combine water, sugar, vanilla and bring to boil, stirring to dissolve sugar. Cook 2 minutes, then add peeled and diced apple, lemon and lime juice and reduce heat to a simmer and cook for around 5 minutes until apple starts to soften slightly (the larger the apple is cut the longer this step will take) Then add frozen blackberries and return to a simmer and continue to cook slowly until blackberries start to break down a little and the apple is nice and soft. Remove from heat and allow to cool, check seasoning is there enough sugar, acid? Serve cold with rice custard brulee
