Yeast Batter
Sieve the flour, salt and sugar into a bowl and make a well. Break the eggs into the well
Dissolve the yeast into the water and pour into the well with the oil. Gradually mix in the
flour and then whisk to a smooth batter. Strain, Cover and rest in a warm place for 1 hour.
Apple Fritter
Peel, core and slice apple into rounds 1cm thick. Sprinkle the apple slices with
lemon juice and 1/3 sugar and marinate 30 minutes. Drain the apples, wipe dry
and dust with flour and shake off excess.
Coat with batter, shake off excess and deep fry at 180C until golden. Drain on
absorbent paper. Mix together remaining sugar and cinnamon and dust fritters while
still warm.
