Braised Pork Neck

2 pork neck 300 g
3 ginger julienne 3 cm piece
4 garlic cloves thinly sliced 3
5 star anise 3
6 soy sauce 160 ml
7 ketjap manis 80 ml
8 honey 60 ml
9 lime juice 10 ml
10 Hot water 200 ml

Preheat oven to 160C. Seal pork neck in baking dish over medium heat. (Baking dish can’t be too large or all the sauce will evaporate).
Add ginger, garlic, star anise, soy, ketjap manis, honey, lime juice and
cold water. Turn pork to coat, cover with foil, and turn heat down to 140C.
Braise for 2 hours, turning pork in sauce every 30 mins.
