Combine garlic, chillies, fish sauce, lime juice and sugar. Add to meat and marinade.
Grill steak until medium rare and heat marinade to a simmer. Keep them separate.
Slice steak thinly and toss all ingredients together including the marinade. Check seasoning and serve.
