Tomato and Goats Cheese Bruschetta

1 Sourdough bread sliced thick, 1.5cm 1
2 Roma tomatoes, ripened 1
3 Basil, chiffonade 1 sprig
4 Olive oil 10 ml
5 Vinegar, white wine or balsamic 10 ml
6 Goats cheese 20 g

Lightly drizzle sour dough with olive oil and grill.
Spread the goats cheese on top of grilled sourdough and warm through under grill
For the Tomato mixture: remove seeds and cut into neat brunoise
Add basil, oil and vinegar
Season mixture and adjust flavourings with vinegar and oil
Spoon onto grilled bread, slice and serve
