Place pot water on stove to boil. Once boiled add vinegar, and simmer
Butter and grill English muffin until golden keep warm
Poach egg in acid water and cook for 3 minutes
While egg is poaching gently wilt baby spinach in butter.
To serve, place warm muffin on plate, top with spinach then poached egg, then nape with warm Sauce Hollandaise.
Serve garnished with freshly cracked pepper.
