Spanish Gazpacho

1 Roma tomatoes 1 kg
2 Garlic 2 cloves
3 Onion brown 1
4 Green capsicum 1
5 Cucumber telegraph 1
6 Cumin ground 1 tsp
7 Red wine vinegar 50 ml
8 Salt 1 tsp
9 Virgin olive oil 150 ml
10 Crusty bread 1 slice
11 Basil leaves torn 6

Wash all vegetables before cutting and peeling
Peel cucumber make sure there is no green skin left
Deseed capsicum and remove stem
Soak bread in water and squeeze out excess
Remove eye of tomatoes
Roughly chop all vegetables
Place vegetables, oil and garlic into blender or processor and blend until smooth
Season with salt and red wine vinegar. You may not need all of it so make sure you taste it
Serve with some torn basil lease and drizzle olive oil.
