1 butter 100 g
2 onions sliced 100 g
3 fish bones from non-oily fish 1 kg
4 white peppercorns 8
5 parsley stalks 25 g
6 bay leaf 1
7 white wine 50 ml
8 lemon juice 20 ml
9 cold water 5 L

Wash bones in cold water, drain
Melt butter, add fish bones, onion, bay, parsley stalks and peppercorns.
Cover pot and lightly sweat for 8 mins, with no colour
Add wine, lemon juice and water, and bring to gentle simmer
Simmer 20 minutes - no longer, skimming frequently
Strain through a fine sieve into a clean container
