Smoked fondant potato

1 Potato 6
2 unsalted butter 100 g
3 garlic, crushed 1 clove
4 thyme 3 sprig
5 vegetable oil 50 ml
6 salt ½ tsp
7 Pepper to tast
8 chicken stock 1000 ml

1. Preheat oven
2. Slice potato into 5 cm slices and make into a cylinder shape
3. Put in water
4. In large pan over medium high heat, heat vegetable oil then adds potatoes flat side down cook until golden brown, flip potatoes
5. Add garlic and thyme
6. Add half the butter and chicken stock, place into the oven for 15 minutes
7. Remove and add extra butter
8. Place into smoker and smoke for 15 minutes
9. Remove from smoker and finish in the pan
10. Reserve for later use
