1 Cream 240 ml
2 water 290 ml
3 Caster sugar 360 g
4 Cocoa powder 120 g
5 Gelatine sheets 6 ea

Bring to the boil the Cream, sugar, and water.
Add the cocoa powder then cook to 103°
Allow to cool off to 60° then add the pre- soften gelatine
Let set for few hours or overnight.
Use @ 30°
