Dry Rub Beef Rump with Chimmi Churri and Rocket

1 Beef rump retail 100 g
2 rocket 50 g
3 Seasoning
4 vegetable oil 10 ml

1. Mix spices for dry rub and rub over steak
2. Marinate in cool room for 1 hour
3. Panfry steak until medium rare. Rest 5 minutes
4. Serve dressed with rocket salad dressed with chimmi churri



Coffee rub (Students halve this recipe and record the changes) 6 Portion

2 Tb chilli powder
2 Tb coffee grounds (not powdery, but a very fine grind)
¼ Tb cayenne pepper
1 Tb ground cumin
½ Tb ground coriander
1 tsp garlic powder
1 tsp mustard powder
2 tsp salt
1 tsp freshly ground black pepper

1. Mix all ingredients together well and rub over beef, store rub that is not used in airtight container

Chimichurri 4 Portion

½ cup olive oil
2 Tb red wine vinegar
½ cup parsley chopped finely
3-4 cloves garlic, finely chopped or minced
2 small red chilies, or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili)
¾ tsp dried oregano
1 tsp sea salt
Pepper, to taste

1. Mix all ingredients together well and store ready to dress salad and beef
