2 Flour, soft 200 g
3 Salt Pinch
4 Butter or Margarine 125 g
5 Egg 1

1. Sieve flour and salt
2. Rub in the fat to achieve a sandy texture
3. Mix sugar and beaten egg
4. Make a well in the centre
5. Add egg mixture to make a firm paste, don’t overwork the paste. Rest 30 minutes.
