Mussels with Chilli

1 Mussels (cleaned and de-bearded) 5
2 onion sliced ¼
3 sambal kept from lesson one 1 Tb
4 lime juice 1 Tb
5 coriander 1 sprig

1. In a large pot, heat oil over medium heat. Add sambal paste, and cook, stirring occasionally, until fragrant, about 2 minutes
2. Add onions, and cook until softened, 3 to 5 minutes more
3. Add mussels, cover, and cook until mussels open and are cooked through, about 5 minutes
4. Remove from heat and serve sprinkled with lime juice and coriander
