Pizza Dough

1 Hard flour 250 g
2 Water 150 ml
3 Dried yeast 5 g
4 sugar 2.5 g
5 salt 2.5 g

Mix all of the dry ingredients together; make a well in the centre.
Pour cold water into well and gradually incorporate the wet into the dry.
Once incorporated, let the dough rest 10 minutes. Then knead for approx 10 minutes until satiny and elastic.
Place into oiled clean stainless steel bowl, cover surface with a little oil, wrap and leave in

Knock down dough and portion as desired, keep covered with a damp cloth so as not to dry out.
