1. To make the sauce melt the butter in a large pan add onion, sage and garlic and cook over medium heat until the onion is soft
2. When ready to serve reheat sauce and place in peas to heat through (do not cook to long the peas will lose their colour!)
3. Fold through chopped parsley and serve with chicken Ballotine
