Crispy Battered Squid

1 Squid tubes frozen 1 whole
2 Garlic crushed 1 clove
3 Lime juice 1/2
4 seasoning To taste
5 Light ale 1/2 cup
6 flour 1/2 cup
7 salt 1/2 tsp
8 Cayenne pepper 1/2 tsp

Defrost squid tubes safely. Pat dry and slice into rings
Place squid tubes into a bowl and marinade with garlic, lime juice and seasoning. Refrigerate at least 30 minutes
Batter: place flour in a bowl and add beer. Whisk until smooth. Add salt and cayenne pepper and sit for 10 minutes at room temperature
Heat oil to 180°
Pat dry squid tubes and lightly dust in flour.
Batter squid and gently place into the fryer individually.
Remove and dry on paper, serve with fresh lemon
