Braised pork short rib

1 short pork ribs 250 g
2 ginger 3-4 slices
3 star anise 1
4 vegetable oil 1 tsp
5 dark soy sauce 1 tsp
6 soy sauce 2 tsp
7 cooking Shao Xin wine 3 tsp
8 rock sugar or brown sugar 3 tsp
9 shallots finely chopped ½ tsp

1. Add the pork ribs into the pot cover with cold water, and bring it to boil, boil for about one minute until the pork has changed color, discard the water in the pot and rinse the pork ribs under running cold water for about 20 seconds, drain well and set aside.
2. Heat oil in the pot with medium-high heat, toss in the ginger and star anise, sauté for 10 seconds until fragrant.
3. Stir in the pork ribs and stir fry for about 1 minute until browned on both sides.
4. Add soy sauce, dark soy sauce, sugar, water and cooking wine sauce stir to make sure the pork ribs are just coverrd with stock.
5. Bring it to boil and turn to low heat and simmer for about one hour with lid on until pork is tender.
6. keep simmering until the sauce is thickened. (adjusted the seasoning)
7. Garnish pork with finely chop shallots.
