Grilled Vegetable Stack

1 red capsicum 50 g
2 haloumi cheese 1/4 pkt
3 spanish onion 40 g
4 zucchini 50 g
5 ripe tomato 50 g
6 thyme 1 sprig
7 olive oil 25 ml

Slice vegetables and haloumi cheese using the mandolin so all are of an even thickness, no more than 3mm.
Coat all in olive oil, thyme, salt and pepper.
Cook on heated char grill until just done, putting on the capsicum first, followed by the
spanish onion, zucchini, haloumi and lastly tomato.
Layer the vegetables and haloumi to serve, finishing with haloumi on top.
