1. Drum up a 20cm cake ring
2. Stir coffee powder and water to dissolve
3. Place butter, chocolate, cocoa powder and coffee in a pan over medium heat.
4. Cook, stirring constantly until melted and combined
5. Remove from heat, cool slightly
6. Whisk egg yolks and sugar until thick and pale
7. Whisk egg whites until soft peaks
8. Add chocolate mixture and almond meal to egg yolk mixture, stir to combine
9. Gently fold egg whites into mix, starting with one spoon
10. Pour into prepared pan, Bake at 160°C for 40 to 45 minutes
11. Cool completely in pan
12. Dust with icing sugar and cocoa powder
