1. Combine ingredients in medium pan until combined and sugar is dissolved well, simmer 5 minutes
2. Remove from heat, strain out coconut and reserve
3. Churn in an ice cream machine until correct consistency
4. Stir ¼ of the coconut back into the sorbet
