1 Caster sugar 100 g
2 Water 50 ml
3 Cream, thickened 250 ml

1. Place water into pan, add sugar
2. Bring to the boil, cook to a deep caramel colour
3. Add the cream carefully, tilting the pot away from you
4. Boil until combined, warm for service
