1 Water 125 g
2 Caster sugar 125 g
3 Honey 100 g
4 Lemon juice 25 ml
5 Star anise 8
6 Passionfruit puree 400 ml
7 Gelatine sheet 20 g

1. Boil the water, sugar, honey, passionfruit, star anise and lemon juice
2. Add the bloomed gelatine, let cool off
3. Strain out the star anise and most of the seeds, pour into a sheet pan lined with cling wrap, place into fridge to set
4. Remove from tray, cut into strips, store in fridge until desired
