1 Oranges, zest and juice 2
2 Water 250 ml
3 Sugar 50 g
4 Arrowroot 5 g

1. Boil together the orange juice, water and sugar
2. Make a slurry out of the arrowroot and whisk into the sauce until it boils and thickens
3. Blanch the orange zest, strain and add to the sauce
4. Serve warm or cold
