1. Mix strawberries, orange zest and juice in pan.
2. Heat to rolling boil on high heat, stirring carefully so as not to break up the strawberries
3. Stir in sugar, heat to rolling boil, stirring constantly until sugar is dissolved, skim off foam.
4. Remove from heat and keep covered with cartouche’ or cling film until required.
