1 Egg yolks 3
2 Sugar ¼ cup
3 Marsala wine ¼ cup
4 Salt pinch

1. Bring water to a boil in a saucepan set over high heat then simmer
2. Add the egg yolks and sugar to a large glass bowl, beat the eggs and sugar until the mixture is thick, pale yellow, and the sugar is completely dissolved, 4 to 5 minutes.
3. Add pinch of salt
4. Place bowl and mixed egg mixture over the water making sure it does not tough the water.
5. Mix until the mixture is light a fluffy and holds a ribbon stage
6. Use mixture immediately. This is a warm sauce and should be done when all other components are complete and ready to plate.
